BREADS AND FLOUR

[ΛΑΚ/λακ.= lacedaemonians (Spartans)  -> Laconian Doric dialect]

• Ἀθάρη = gruel or porridge, χονδροαλεσμένος σῖτος, ζωμὸς (πηκτὸς) ἐξ αὐτοῦ
• Ἀκράτισμα = bread or flour that was dipped in diluted wine - ο άρτος ή το άλφιτο που τρώγονταν βουτηγμένο σε άκρατο οίνο (= ανέρωτο).
• Ἀλιφατίτης = bread made with added oil. It also contained animal fats, λαδόψωμο - μπορούσε να έχει και ζωϊκά λίπη; σφολιάτα (με βούτυρο) 
• Ἄλφιτα = bread, άρτος, (συνεκδοχικά) φαγητό
• Ἄμης = a kind of cake (with milk), εἶδος πλακοῦντος μετὰ γάλακτος
• Ἄμυλον = type of cake, πίτα από λευκό αλεύρι
• Ἄλφι = flour, especially barley flour, κριθαρένιο αλεύρι 
• Ἀμφιφῶν = cake offered to Munychian Artemis by double light, surrounded by lighted tapers, είδος πίτας προσφερόμενο στην Μουνιχία Άρτεμιδα
• Ἄρτος [βέσκεροι‡ κατά Λακ.] = bread, -//-

* ζυμίτην, ἄζυμον, σεμιδαλίτην, χονδρίτην, συγκομιστόν, ἐξ ὀλυρῶν, τὸν ἐκ τιφῶν, τὸν ἐκ μελινῶν.

• Ἀττανίτης/ἐπίχυτος = type of cake, εἶδος πλακουντίου μνημονευομένου μετὰ τοῦ τηγανίτου
• Βλωμιαίος = bread sectioned in parts, ψωμί χωρισμένο σε τμήματα. Οι εγκοπές το έκαναν να χωρίζεται σε κομμάτια ευκολότερα
• Γοῦρος = a kind of cake, είδος πίτας 
• Δενδαλίς = a kind of barley cake, είδος κριθαριένιας πίτας 
• Διακόνιον = a kind of cake, είδος πίτας 
• Ἐγκρυφίας = loaf baked in the ashes, είδος ψωμιού που ψήθηκε στη χόβολη 
• Ἐγκρίς = cakes boiled in oil, and after that seasoned with honey, πλακοῦς παρεσκευασμένος μετ' ἐλαίου καὶ μέλιτος, καλούμενος καὶ ταγηνίας, «τηγανίτα»
• Ἐλατήρ = kind of broad, flat cake, είδος πλατειάς και επίπεδης πίτας
• Ἐλλύτας = kind of cake, είδος πίτας
• Ἐνθρυμματίς = a type of cake or dipping, είδος πίτας ή βουτήματος (με κομμάτια ψωμιού βρεγμένα σε κρασί), το ένθρυπτον.
• Ἐσχαρίτης [της Ρόδου] =  bread baked on a earthen rack, with sweet sauce - ψωμί ψημένο πάνω σε πήλινη σχάρα, με σάλτσα γλυκεία
• Ἴτριον = thin cake with sesame and honey, είδος λεπτού ψωμιού με σουσάμι και μέλι
• Κόλλαβος = kind of cake or roll, είδος πίτας ή ψωμιού
• Κόλλιξ = a type of round bread made from coarsely ground flour, είδος ψωμιού σε στρογγυλό σχήμα από αλεύρι χοντροαλεσμένο, (ιατρική) χάπι
• Κολλύρα = a kind of bread, ψωμάκι με σχήμα κυκλικό ή φραντζόλας, μικρό κουλούρι που συνοδεύει το γεύμα συχνά με περίτεχνο σχήμα

* ὄψον ἐπ’ αὐτῇ

• Κριμνίτης = a kind of cheesecake made of a coarser sort of barley-meal (κρίμνον), ἄρτος πεποιημένος ἐκ κρίμνου, φαῦλος, πρόστυχος ἄρτος
• Κρηπίς = shoe-shaped cake; είδος μπότας / υποδήματος

• Κυνάδες [ΛΑΚ.] =

*  [...] and besides this they used to anoint their hands with perfumes, despising the crumbs of bread [ἀπομαγδαλίας] on which men at banquets used to wipe their hands, and which the Lacedæmonians called κυνάδες (As being thrown to the dogs;).  

• Λάγανον = type of thin and broad bread, λεπτό και πλατύ είδος ψωμιού από αλεύρι και λάδι, η λαγάνα
• Λέκιθος = (m.) gruel of pulse or cereals; (f.) yolk of an egg, χυλός από όσπρια ή δημητριακά
• Μακωνίδης = bread with poppy seeds, ψωμί με σπόρο παπαρούνας
• Μελιτοῦς = honey cake, μελόπιτα 
• Μελιτοῦττα = type of cake made of honey, είδος πίτας που παρασκευαζόταν από μέλι και δινόταν ως ιερή προσφορά στον Κέρβερο κατά την ταφή των νεκρών
• Μᾶζα = barley bread, κριθαρόψωμο ή γλυκό
• Μυστίλη = piece of bread scooped out as a spoon, to sup soup or gravy with, κοίλο ψωμί που έβαζαν πάνω του υδαρή φαγητά
• Ὀβελίας = bread baked on a small rack, ψωμί που είναι ψημένο σε μικρή σούβλα
• Οἰνοῦττα = type of cake made of wine, barley flour, water and oil that was given to the rowers; είδος πίτας που παρασκευαζόταν από κρασί, κριθάλευρο, νερό και λάδι και δινόταν ως τροφή σε κωπηλάτες
• Ὀρίνδης = bread made of rice, άρτο ἐξ ὀρύζης γινομένου ἢ ἀπὸ τοῦ ἐν Αἰθιοπίᾳ γιγνομένου σπέρματος, ὅ ἐστιν ὅμοιον σησάμῳ.
• Πλακοῦς [Αθηναϊκή, Σάμον] = cheese cake, τυρόπιτα

* Menander, in his False Hercules, speaks of cheesecakes made in a mould [ἐγχύτων]

• Πόλτος = porridge made of flour, -//-

* To boil some morning πόλτος.

• Πόπανον = biscuit; round cake used at sacrifices, στρογγυλό γλύκισμα που προσφερόταν στους θεούς κατά την τέλεση θυσιών; επίπεδο ψωμί με ένα έπαρμα (κουμπί) στο κέντρο (ο ομφαλός) ή περισσότερα (μονόμφαλα ή πολυόμφαλα). 
• Πυραμοῦς = cake of roasted wheat and honey, πίτα από ψημένο σιτάρι και μέλι
• Σκριβλίτης = donuts, τηγανιτές μπάλες από αραιό και υγρό ζυμάρι ρίχνονταν σε καυτό λίπος, λουκουμάδες
• Σησαμίδες = cakes made of honey, and roasted sesame, and oil, of a round shape, άρτοι σφαιρικοί από μικρές μπάλες και σησάμι. Στη Σπάρτη προσφερόταν στη Δήμητρα.
• Σησαμοῦς = sweet made of honey and sesame, πέμμα ἐκ μέλιτος καὶ σησάμης
• Σταιτίτης = a species of cheesecake made of wheaten-flour and honey, τηγανίτα 

* but the wheaten-flour is wetted, and then put into a frying-pan; and after that honey is sprinkled over it, and sesame, and cheese

• Τυροκόσκινον = cheesecake, πλακοῦς ἐκ τυροῦ, τυρόπιτα

* Pound some cheese (τῦρον) carefully, and put it into a vessel; then place above it a brazen sieve (κόσκινον) and strain the cheese through it. And when you are going to serve it up, then put in above it a sufficient quantity of honey. 

• Ὑποτυρίδες = cheesecake, πλακοῦς ἐκ τυροῦ, τυρόπιτα

* Put some honey into some milk, pound them, and put them into a vessel, and let them coagulate; then, if you have some little sieves at hand, put what is in the vessel into them, and let. the whey run off; and when it appears to you to have coagulated thoroughly, then take up the vessel in which it is, and transfer it to a silver dish, and the coat, or crust, will be uppermost. But if you have no such sieves; then use some new fans, such as those which are used to blow the fire; for they will serve the same purpose. 

• Φθοῖς = type of cake, είδος πίτας

* Take some cheese and pound it, then put it into a brazen sieve and strain it; then put in honey and a hemina of flour made from spring wheat, and beat the whole together into one mass.
